- 1 teaspoon ground coriander

- 1 can (14.5 oz) diced tomatoes
- 1/2 cup natural peanut butter
- 4 cups vegetable broth
- Chopped peanuts and fresh cilantro for garnish (optional)
Instructions
- Heat the oil and sauté aromatics: Heat the vegetable oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes until it softens and becomes translucent.
- Add garlic, ginger, and spices: Stir in the minced garlic, grated ginger, ground cumin, ground coriander, and cayenne pepper if using. Cook for 1 to 2 minutes until the mixture becomes fragrant.
- Add vegetables and liquids: Add the diced sweet potato, chopped red bell pepper, canned diced tomatoes (with juices), natural peanut butter, and vegetable broth to the pot. Stir thoroughly to combine all ingredients.
- Simmer the stew: Bring the mixture to a simmer. Cover the pot and let it cook for 15 to 20 minutes, or until the sweet potatoes are tender when pierced with a fork.
- Add chickpeas and greens: Stir in the drained chickpeas and chopped kale or spinach. Continue to simmer uncovered for another 5 minutes until the greens have wilted and the stew has thickened.
- Season and serve: Taste the stew and season with salt and black pepper as needed. Serve hot, garnished with chopped peanuts and fresh cilantro if desired.
