Instructions

  1. Prepare the Apple Filling: In a skillet over medium heat, melt the butter. Add the peeled and diced apples, brown sugar, ground cinnamon, ground nutmeg, and lemon juice. Cook the mixture for 4 to 5 minutes until the apples become soft and tender.
  2. Thicken the Filling: Stir in the cornstarch slurry (cornstarch mixed with water) and continue cooking for an additional 1 to 2 minutes until the mixture thickens to a slightly glossy consistency. Remove from heat and let cool slightly.
  3. Assemble the Egg Rolls: Place an egg roll wrapper on a clean, flat surface with one corner pointing towards you to form a diamond shape. Spoon about 2 tablespoons of the apple filling into the center of the wrapper.
  4. Roll and Seal: Fold the bottom corner of the wrapper over the filling, then fold in the left and right sides tightly to enclose the filling. Roll the wrapper upwards tightly and seal the top corner with a small dab of water to prevent it from opening during frying. Repeat this process with the remaining wrappers and filling.
  5. Heat the Oil: In a deep pan or skillet, heat about 2 inches of vegetable oil to 350°F (175°C). Use a thermometer to maintain the temperature for even frying.
  6. Fry the Egg Rolls: Fry the egg rolls in batches to avoid overcrowding the pan. Cook for 2 to 3 minutes per side or until golden brown and crispy on all sides. Turn gently using tongs to ensure even cooking.
