Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking and ensure even baking.
  2. Cook the Vegetables: Heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until softened and lightly browned. Stir in the chopped spinach and cook for an additional 2 minutes until wilted. Season with garlic powder, onion powder, dried thyme if using, salt, and pepper. Remove from heat once combined and flavorful.
  3. Assemble the Quesadillas: Place two tortillas on the prepared baking sheet. Sprinkle a layer of shredded cheese over half of each tortilla. Evenly distribute the sautéed spinach and mushroom mixture on top of the cheese. Add another layer of cheese over the vegetables, then fold each tortilla in half to seal the filling inside.
