- 1 small yellow onion, diced
- 1 lb ground beef
Sweet Potatoes
- 2 sweet potatoes, cut into small strips
- 2 tablespoons olive oil
Toppings
- 10 oz romaine lettuce, chopped
- 3 roma tomatoes, diced
- 1 cup pickles, diced (optional)
- 1 cup shredded yellow cheddar cheese
Sauce
- â…“ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon mustard
- 1 tablespoon pickle juice
- 1 teaspoon Worcestershire sauce
- ¼ teaspoon smoked paprika
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
Instructions
- Roast Sweet Potatoes: Preheat your oven to 425°F (220°C). Toss the sweet potato strips with 2 tablespoons of olive oil until evenly coated. Spread them out in a single layer on a baking sheet lined with parchment paper. Roast in the oven for about 40 minutes, tossing occasionally to ensure they cook evenly, until the sweet potatoes are tender and slightly crispy on the edges.
- Brown Beef: While the sweet potatoes are roasting, heat 1 tablespoon of olive oil in a pan over medium-high heat. Add the diced onion and cook until softened and translucent. Add the ground beef to the pan, breaking it apart with a spatula as it cooks. Continue cooking until the beef is fully browned and no longer pink, then remove from heat.
- Assemble Bowls: Divide the chopped romaine lettuce evenly among three serving bowls. Top each with the cooked ground beef and onions, diced tomatoes, pickles if using, and shredded cheddar cheese.
- Make Sauce: In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle juice, Worcestershire sauce, smoked paprika, onion powder, and garlic powder until smooth and well combined.
- Serve: Add the roasted sweet potato fries to each bowl. Drizzle the prepared sauce generously over the top, and serve immediately for a delicious and balanced meal.
