Description

This Blackberry Balsamic and Brie Grilled Cheese sandwich combines the rich creaminess of Brie cheese with a tangy-sweet homemade blackberry balsamic reduction. Layered on buttered sourdough bread and optionally complemented by fresh baby spinach or arugula, this gourmet grilled cheese offers a sophisticated twist on a classic comfort food that is perfect for lunch or dinner.

Ingredients

Scale

Blackberry Balsamic Mixture

  • 1 cup fresh blackberries
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey

Main Ingredients

  • 8 slices sourdough or artisan bread
  • 4 tablespoons softened butter
  • 8 ounces Brie cheese, sliced
  • 1 cup baby spinach or arugula (optional)

Instructions

  1. Make the Blackberry Balsamic Mixture: In a small saucepan over medium heat, combine the blackberries, balsamic vinegar, and honey. Cook for 5 to 7 minutes, stirring occasionally, until the berries soften and the mixture thickens slightly. Lightly mash the berries with a spoon, then remove from heat and let cool.
  2. Prepare the Bread and Skillet: Spread softened butter on one side of each bread slice. Place half the slices butter-side down in a large skillet over medium heat.
  3. Assemble the Sandwiches: Add slices of Brie cheese onto each bread slice in the skillet. Spoon the cooled blackberry balsamic mixture evenly over the Brie. If desired, add baby spinach or arugula on top of the blackberry mixture.
  4. Complete the Sandwich: Top each sandwich with the remaining bread slices, butter-side up.
  5. Cook the Sandwiches: Cook for 3 to 4 minutes per side, pressing gently with a spatula, or until the bread is golden brown and the Brie cheese has melted.
  6. Serve: Remove from skillet, slice in half if desired, and serve warm for best flavor and texture.

Notes

  • Use a mild Brie for a creamier melt that pairs well with the tartness of the blackberries.
  • The blackberry balsamic mixture can be prepared ahead of time and refrigerated for up to 3 days, making assembly quick and easy.
  • For extra crunch or flavor, consider adding toasted walnuts or a sprinkle of fresh thyme.
