Oatmeal Base
- 2 cups rolled oats
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 3/4 cups milk of choice
- 1/4 cup maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter or oil
- 2 cups blueberries
Topping
- 1/2 cup rolled oats
- 2 tablespoons flour
- 2 tablespoons brown sugar
- 2 tablespoons butter
Instructions
- Prepare baking dish and oven: Grease an 8×8 inch baking dish to prevent sticking and preheat your oven to 375°F (190°C) to ensure it’s ready for baking.
- Mix dry ingredients for base: In a large bowl, combine 2 cups of rolled oats, 1/2 teaspoon cinnamon, 1/4 teaspoon salt, and 1 teaspoon baking powder to create the dry oat mixture.
- Whisk wet ingredients: In another bowl, whisk together 1 3/4 cups milk of choice, 1/4 cup maple syrup, 1 large egg, 1 teaspoon vanilla extract, and 2 tablespoons melted butter or oil until well blended.
- Combine mixtures and add blueberries: Pour the wet ingredient mixture into the dry ingredients and stir until combined. Gently fold in 2 cups of fresh blueberries to evenly distribute throughout the batter.
- Transfer to baking dish: Pour the oatmeal mixture into the prepared baking dish, smoothing the top to make an even layer.
- Prepare topping: In a small bowl, mix 1/2 cup rolled oats, 2 tablespoons flour, 2 tablespoons brown sugar, and 2 tablespoons butter until crumbly. Sprinkle this topping evenly over the oatmeal mixture in the baking dish.
- Bake the dish: Place the baking dish in the preheated oven and bake for 40 to 45 minutes until the top is golden brown and crisp, and the oat mixture is set.
- Cool and serve: Remove from the oven and let the baked oatmeal cool slightly before serving to allow it to firm up and be easier to portion.
Notes
- You can substitute the milk with any plant-based milk to make this recipe dairy-free.

- Use frozen blueberries if fresh are not available; no need to thaw before adding.
- Store leftovers covered in the refrigerator for up to 4 days and reheat before serving.
- This baked oatmeal can be served warm or at room temperature, and pairs well with a drizzle of additional maple syrup or a dollop of yogurt.
