Ingredients
Scale
Vegetables
- 1 lb bok choy, washed and chopped
- 8 oz mushrooms (shiitake, cremini, or button), sliced
- 2 cloves garlic, minced
Sauce and Seasoning
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp rice vinegar
- 1/2 tsp toasted sesame oil (optional, for extra flavor)
- 1/4 tsp red pepper flakes (optional, for heat)
- Salt and pepper, to taste
Cooking Oils and Garnish
- 2 tbsp sesame oil (or vegetable oil)
- 1 tbsp sesame seeds (for garnish, optional)
Instructions
- Prepare the Ingredients: Wash and chop the bok choy into bite-sized pieces. Slice the mushrooms and mince the garlic cloves thoroughly to ensure even cooking and flavor distribution.
- Heat the Oil: In a large skillet or wok, heat 2 tablespoons of sesame oil (or vegetable oil) over medium-high heat until shimmering, which helps release the oil’s fragrant aroma.
- Sauté Garlic: Add the minced garlic to the hot oil and sauté for about 30 seconds until fragrant, taking care not to burn it as that would create bitterness.
- Cook Mushrooms: Add the sliced mushrooms to the skillet and stir-fry for 4-5 minutes until they are tender and have released their moisture, developing a lightly browned exterior.
- Add Bok Choy: Toss in the chopped bok choy and continue to stir-fry for another 3-4 minutes. Cook until the bok choy wilts but remains crisp and vibrant green.
- Season the Stir-Fry: Pour in 1 tablespoon of soy sauce, 1 teaspoon of rice vinegar, and (optionally) 1/2 teaspoon of toasted sesame oil. Sprinkle 1/4 teaspoon red pepper flakes if you prefer some heat. Stir well to combine and coat all ingredients evenly.
- Adjust Taste & Finish: Season with salt and pepper to taste. Cook for an additional 1-2 minutes to let the flavors meld together and the liquid slightly reduce.
- Serve and Garnish: Remove from heat and transfer to a serving dish. Sprinkle 1 tablespoon sesame seeds over the top if desired for added texture and flavor. Serve immediately as a side dish or light main.
Notes
- Use tamari instead of soy sauce for a gluten-free option.
- For extra protein, add tofu or cooked chicken during cooking.
- Adjust red pepper flakes to control heat according to your preference.
- This stir-fry is best served fresh to maintain the crispness of the bok choy.
- Can be paired with steamed rice or noodles for a complete meal.
