Broccoli Tater Tots
- 2 cups broccoli florets (fresh or frozen, steamed and finely chopped)
- 1 cup shredded cheddar cheese
- 1/3 cup breadcrumbs (regular or panko)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- Prepare broccoli: Steam the broccoli florets until tender. Once cooled slightly, finely chop them by hand or pulse in a food processor until they reach a rice-like size.
- Mix ingredients: In a large bowl, combine the chopped broccoli, shredded cheddar cheese, breadcrumbs, grated Parmesan cheese, egg, garlic powder, salt, and pepper. Stir well until all ingredients are fully incorporated.
- Shape tots: Scoop about 1 tablespoon of the mixture at a time and use your hands to shape the mixture into small, tot-sized cylinders. Place each tot on the prepared baking sheet, spaced slightly apart.
- Bake: Bake the tots in the preheated oven for 20 to 25 minutes. Flip them halfway through baking to ensure even crispiness and a golden exterior.
