Ingredients
Scale
Buffalo Chicken
- 1 lb cooked chicken breast (shredded)
- 1/4 cup buffalo sauce (store-bought or homemade)
- 1 tablespoon ranch dressing (optional, for creaminess)
Sandwich Assembly
- 8 slices bread (white, whole wheat, or sourdough)
- 4 tablespoons butter (for spreading on bread)
- 1 tablespoon butter (for grilling the sandwich)
- 1 1/2 cups shredded sharp cheddar cheese (or a blend of cheddar and mozzarella)
- 1/2 cup crumbled blue cheese (optional for added flavor)
- 1/4 cup chopped green onions (optional, for garnish)
Instructions
- Prepare Buffalo Chicken: In a bowl, combine the shredded cooked chicken with buffalo sauce and ranch dressing if using. Stir until the chicken is evenly coated. Set aside.
- Heat Skillet: Heat a nonstick skillet or griddle over medium heat to prepare for grilling the sandwiches.
- Butter Bread: While the skillet heats, spread butter on one side of each slice of bread to achieve a crispy, golden exterior when grilled.
- Assemble Sandwich – Bottom Layer: Place one slice of bread, butter-side-down, on the skillet and add a generous layer of shredded cheddar cheese and blue cheese if using on top.
- Add Buffalo Chicken: Spread a layer of the buffalo chicken mixture evenly over the cheese on the bread.
- Top Sandwich: Place the second slice of bread butter-side-up on top of the sandwich to complete the layering.
- Grill Sandwich: Grill the sandwich for about 3-4 minutes on each side until the bread is golden brown and crispy and the cheese has melted, pressing gently with a spatula to keep it compact.
- Serve: Remove from skillet, slice the sandwich, garnish with chopped green onions if desired, and serve immediately while warm.
