Description

This Buffalo Chicken Grilled Cheese sandwich combines spicy buffalo chicken with melty cheddar and blue cheese, all toasted to crispy perfection. A quick and flavorful twist on classic grilled cheese that’s perfect for lunch or a casual dinner.

Ingredients

Scale

Buffalo Chicken

  • 1 lb cooked chicken breast (shredded)
  • 1/4 cup buffalo sauce (store-bought or homemade)
  • 1 tablespoon ranch dressing (optional, for creaminess)

Sandwich Assembly

  • 8 slices bread (white, whole wheat, or sourdough)
  • 4 tablespoons butter (for spreading on bread)
  • 1 tablespoon butter (for grilling the sandwich)
  • 1 1/2 cups shredded sharp cheddar cheese (or a blend of cheddar and mozzarella)
  • 1/2 cup crumbled blue cheese (optional for added flavor)
  • 1/4 cup chopped green onions (optional, for garnish)

Instructions

  1. Prepare Buffalo Chicken: In a bowl, combine the shredded cooked chicken with buffalo sauce and ranch dressing if using. Stir until the chicken is evenly coated. Set aside.
  2. Heat Skillet: Heat a nonstick skillet or griddle over medium heat to prepare for grilling the sandwiches.
  3. Butter Bread: While the skillet heats, spread butter on one side of each slice of bread to achieve a crispy, golden exterior when grilled.
  4. Assemble Sandwich – Bottom Layer: Place one slice of bread, butter-side-down, on the skillet and add a generous layer of shredded cheddar cheese and blue cheese if using on top.
  5. Add Buffalo Chicken: Spread a layer of the buffalo chicken mixture evenly over the cheese on the bread.
  6. Top Sandwich: Place the second slice of bread butter-side-up on top of the sandwich to complete the layering.
  7. Grill Sandwich: Grill the sandwich for about 3-4 minutes on each side until the bread is golden brown and crispy and the cheese has melted, pressing gently with a spatula to keep it compact.
  8. Serve: Remove from skillet, slice the sandwich, garnish with chopped green onions if desired, and serve immediately while warm.

Notes

  • Use cooked chicken leftovers or rotisserie chicken for convenience.
  • Adjust buffalo sauce quantity to your preferred spice level.
  • Ranch dressing is optional but adds creaminess and balances the spice.
  • Blue cheese is optional but provides a classic buffalo flavor contrast.
  • Use a spatula to press gently while grilling to ensure even melting and compactness.
  • Serve with celery sticks or a side salad for a complete meal.
