Description

These Buffalo Latkes with Blue Cheese Dip offer a flavorful twist on traditional potato latkes by coating them in spicy buffalo wing sauce and pairing them with a creamy, tangy blue cheese dip. Crispy on the outside and tender inside, these latkes make a perfect appetizer or snack for any occasion.

Ingredients

Scale

For the Buffalo Latkes

  • 4 medium potatoes, peeled and grated
  • 1 small onion, grated
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup buffalo wing sauce
  • Vegetable oil, for frying

For the Blue Cheese Dip

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled blue cheese
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Drain Potatoes and Onion: Place grated potatoes and onion in a clean kitchen towel and squeeze out as much excess moisture as possible to ensure crispy latkes.
  2. Prepare Latke Mixture: In a large bowl, combine the drained potatoes and onion with beaten eggs, flour, garlic powder, smoked paprika, salt, and black pepper, mixing thoroughly to create an even batter.
  3. Heat Oil: Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat until hot enough for frying.
  4. Fry Latkes: Shape the mixture into small patties and fry them in the hot oil until golden brown and crispy, approximately 3–4 minutes per side. Remove the latkes and drain them on paper towels to remove excess oil.
  5. Toss with Buffalo Sauce: While the latkes are still warm, toss them gently in a bowl with buffalo wing sauce until they are evenly coated.
  6. Prepare Blue Cheese Dip: In a separate bowl, mix the sour cream, mayonnaise, crumbled blue cheese, lemon juice, and salt and pepper until smooth and well combined.
  7. Serve: Serve the buffalo-coated latkes warm alongside the blue cheese dip for dipping.

Notes

  • Drain the grated potatoes thoroughly to ensure the latkes turn out crispy rather than soggy.
  • You can adjust the amount of buffalo wing sauce based on your heat preference.
  • For a milder option, serve the latkes with additional sour cream instead of the buffalo sauce.
  • Use freshly grated blue cheese for the dip for the best flavor and texture.
  • Vegetable oil is preferred for frying due to its high smoke point, but canola or peanut oil are also good alternatives.
