Ingredients
Scale
Chicken
- 4 bone-in chicken thighs (skin-on)
Marinade
- 1/4 cup fresh cilantro, chopped
- 1/4 cup freshly squeezed lime juice
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Prepare the Marinade: In a bowl, combine freshly squeezed lime juice, minced garlic, chopped cilantro, ground cumin, paprika, olive oil, salt, and pepper. Mix well to create a flavorful marinade.
- Marinate the Chicken: Place the bone-in chicken thighs with skin on into a resealable plastic bag or dish. Pour the marinade over the chicken ensuring each piece is well coated. Seal or cover and refrigerate for at least 30 minutes, or overnight for enhanced flavor.
- Preheat Grill or Oven: If using a grill, preheat it to medium-high heat (around 400°F/204°C). If baking, preheat the oven to 425°F (220°C).
- Cook the Chicken: Remove the marinated chicken from the refrigerator and place it directly onto the grill or on a baking sheet if using the oven. Grill for about 7-8 minutes on each side until the chicken achieves a desirable char and reaches an internal temperature of 165°F (75°C).
- Rest and Serve: Allow the chicken to rest for 5 minutes after cooking. Serve hot with fresh lime wedges and additional chopped cilantro for garnish and an extra burst of flavor.
Notes
- Marinate the chicken overnight for deeper flavor penetration.
- Use a meat thermometer to ensure chicken is cooked safely to 165°F (75°C).
- For indoor cooking, baking can be substituted if a grill is unavailable, but grilling adds the signature char flavor.
- Serve with rice, salad, or tortillas for a complete meal.
- Skin-on chicken thighs help retain moisture and add crispiness when charred.
