Description

Cheesy Beef Taco Roll Ups are a delicious and easy-to-make Mexican-inspired dish perfect for a quick dinner or casual gathering. Ground beef seasoned with taco spices is spread over flour tortillas, topped with shredded cheddar cheese, rolled tightly, and baked until golden and bubbly. Served with optional sour cream and guacamole, these savory roll ups are comforting, flavorful, and sure to be a family favorite.

Ingredients

Scale

Beef Filling

  • 1 lb ground beef
  • 1 packet taco seasoning
  • Water as directed on seasoning packet

Roll Ups

  • 8 flour tortillas (8-inch)
  • 2 cups shredded cheddar cheese
  • 1/2 cup salsa
  • 1/4 cup chopped green onions (optional)

For Serving (Optional)

  • Sour cream
  • Guacamole

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish to prevent sticking and to help the roll ups bake evenly.
  2. Cook the Ground Beef: In a skillet over medium heat, cook the ground beef, breaking it apart with a spatula until fully browned. Drain any excess fat to reduce greasiness.
  3. Add Taco Seasoning: Stir in the taco seasoning and the amount of water specified on the seasoning packet. Simmer the mixture for 5 minutes to let the flavors meld and the sauce thicken slightly.
  4. Assemble Roll Ups: Spread about 1/4 cup of the seasoned beef mixture evenly over each flour tortilla. Then sprinkle each with shredded cheddar cheese and a spoonful of salsa.
  5. Roll the Tortillas: Roll each tortilla tightly around the filling, making sure the seam is secure to prevent unrolling during baking.
  6. Arrange in Baking Dish: Place each rolled tortilla seam side down in the prepared baking dish, lining them up side by side.
  7. Bake: Bake in the preheated oven for 15 to 20 minutes, or until the cheese is melted, bubbly, and the edges of the tortillas are golden brown.
  8. Garnish and Serve: Remove from the oven, sprinkle with chopped green onions if using, and serve warm with sour cream and guacamole on the side for dipping.

Notes

  • For a spicier version, add chopped jalapeños or use spicy salsa inside the roll ups.
  • To make this recipe gluten free, substitute the flour tortillas with corn tortillas or gluten-free tortillas.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven to maintain crispiness.
  • You can add beans or corn to the beef mixture for extra texture and nutrition.
  • For a lower-fat option, use lean ground beef or ground turkey and reduced-fat cheese.
