Description

The Cheesy Mushroom Melt Sandwich is a delicious vegetarian main course featuring sautéed cremini mushrooms, melted provolone and mozzarella cheeses, and toasted sourdough bread. This savory sandwich combines rich flavors and a satisfying texture, perfect as a hearty lunch or dinner option.

Ingredients

Scale

Mushroom Filling

  • 8 ounces cremini or button mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon dried thyme (optional)

Sandwich

  • 4 slices sourdough or sandwich bread
  • 4 slices provolone or Swiss cheese
  • 0.5 cup shredded mozzarella cheese
  • 1 tablespoon mayonnaise or softened butter for spreading

Instructions

  1. Sauté Mushrooms: Heat olive oil and butter in a skillet over medium heat. Add the sliced mushrooms and cook for 6 to 8 minutes until browned and tender. Stir in the garlic, salt, black pepper, and thyme if using, and cook for 30 seconds until fragrant. Remove from heat.
  2. Prepare Bread: Spread mayonnaise or softened butter on one side of each bread slice. This will help achieve a golden, crispy texture when cooked.
  3. Assemble Sandwiches: Place two slices of bread butter-side down in the skillet over medium heat. Top each with one slice of provolone or Swiss cheese, an even layer of the sautéed mushrooms, and shredded mozzarella cheese. Cover with the remaining bread slices, butter-side up.
  4. Cook Sandwiches: Cook for 3 to 4 minutes per side until the bread is golden brown and the cheese is fully melted. Use a spatula to carefully flip the sandwiches halfway through cooking.
  5. Serve: Remove the sandwiches from the skillet, slice in half, and serve hot for the best flavor and texture.

Notes

  • For extra flavor, add caramelized onions or a drizzle of truffle oil to the mushroom mixture.
  • This sandwich pairs wonderfully with tomato soup or a simple green salad for a fulfilling meal.
