Instructions
- Make Raspberry Sauce: In a small saucepan, combine 1 1/2 cups of fresh raspberries with the granulated sugar and lemon juice. Cook over medium heat for 5 to 7 minutes, stirring gently until the raspberries break down and thicken into a sauce. Remove from heat and let cool completely.
- Whip the Cream: In a large bowl, using a mixer, whip the cold heavy cream with powdered sugar and vanilla extract until stiff peaks form, being careful not to overwhip.
- Prepare Cake: Cut the cooled chocolate cake into bite-sized cubes suitable for layering.
- Assemble the Trifle: In a trifle dish or large glass bowl, start with a layer of one-third of the cake cubes. Add a layer of chocolate pudding or ganache, followed by a layer of whipped cream, and spoon over some raspberry sauce. Repeat these layers two more times, ensuring even distribution.
- Finish and Chill: Top the final layer with the remaining whipped cream, fresh raspberries, and sprinkle with mini chocolate chips or shaved chocolate for garnish. Refrigerate the trifle for at least one hour to allow flavors to meld before serving.
