Description

Coconut Keto Clusters are a delicious and healthy low-carb snack perfect for those following a keto or gluten-free diet. Made with shredded coconut, almonds, pecans, and sugar-free dark chocolate, these clusters offer a satisfying crunch and rich flavor without the guilt. They are baked to golden perfection and drizzled with melted chocolate for an irresistible treat.

Ingredients

Scale

Dry Ingredients

  • 2 cups unsweetened shredded coconut
  • 1/2 cup chopped almonds
  • 1/4 cup chopped pecans
  • 1/3 cup sugar-free dark chocolate chips

Wet Ingredients

  • 1/4 cup coconut oil
  • 2 tablespoons powdered erythritol or keto sweetener of choice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Combine Dry Ingredients: In a large bowl, mix together the unsweetened shredded coconut, chopped almonds, and chopped pecans until evenly blended.
  3. Melt and Mix Wet Ingredients: In a small saucepan over low heat, gently melt the coconut oil. Stir in powdered erythritol, vanilla extract, and sea salt until fully combined and smooth.
  4. Coat Dry Mixture: Pour the melted coconut oil mixture over the bowl of coconut and nuts. Stir thoroughly to ensure all dry ingredients are evenly coated.
  5. Form Clusters: Spread the mixture onto the prepared baking sheet in small clusters to ensure even baking and easy portioning.
  6. Bake: Place the tray in the oven and bake for 18 to 22 minutes, stirring gently halfway through to promote even browning. The clusters should become golden brown.
  7. Cool Clusters: Remove from the oven and allow the clusters to cool completely on the baking sheet. Cooling will help the clusters set and firm up.
  8. Melt Chocolate and Finish: Melt the sugar-free dark chocolate chips separately and either drizzle the chocolate over the cooled clusters or gently toss the clusters in the melted chocolate to coat evenly.
  9. Set Chocolate and Serve: Let the chocolate set completely at room temperature before serving to achieve the perfect texture and flavor combination.

Notes

  • Allow the clusters to cool fully before breaking them apart to ensure they hold their shape.
  • Store in an airtight container at room temperature for up to 5 days or refrigerate for longer freshness.
  • Feel free to substitute nuts or sweeteners to match personal preferences while keeping it keto-friendly.
