Ingredients
Scale
For the Roast Beef
- 3 lb beef roast (sirloin, chuck, or your preferred cut)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Cranberry Balsamic Sauce
- 1 cup fresh cranberries (or 1/2 cup cranberry sauce)
- 1/2 cup balsamic vinegar
- 1/4 cup honey
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup beef broth
Instructions
- Preheat Oven: Set your oven to 350°F (175°C) to prepare for roasting the beef.
- Make Cranberry Balsamic Sauce: In a medium saucepan, combine cranberries, balsamic vinegar, honey, garlic, rosemary, salt, and pepper. Simmer over medium heat until the cranberries burst and the sauce thickens slightly, about 5-7 minutes. Add beef broth and cook for an additional 2-3 minutes, then remove from heat.
- Sear the Roast: Heat olive oil in an oven-safe skillet over medium-high heat. Season the beef roast with salt and pepper. Sear the roast on all sides until browned, approximately 4-5 minutes per side, to lock in juices and flavor.
- Add Sauce and Roast: Pour the prepared cranberry-balsamic sauce over the seared roast in the skillet. Transfer the skillet to the preheated oven.
- Roast the Beef: Roast the beef for 1.5 to 2 hours, basting it with the sauce every 30 minutes. Roast until the internal temperature reaches your desired doneness: 135°F for medium-rare or 145°F for medium.
- Rest and Serve: Remove the roast from the oven and let it rest for 10 minutes before slicing. Serve warm with the cranberry-balsamic sauce spooned over the slices.
Notes
- Use a meat thermometer to check the roast’s internal temperature for perfect doneness.
- If fresh cranberries are not available, substitute cranberry sauce, adjusting sweetness as needed.
- Searing the roast ensures a flavorful crust and seals in juices.
- Be sure to baste the roast regularly to keep it moist and flavorful.
- Letting the roast rest allows juices to redistribute, making the beef tender and juicy.
