Ingredients
Scale
Cucumber
- 1 medium cucumber, peeled and thinly sliced
Benedictine Spread
- 8 oz cream cheese, softened
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 teaspoon garlic powder
- Salt and pepper to taste
Bread and Garnish
- 8 slices white or whole wheat bread, crusts removed
- Fresh parsley or dill for garnish (optional)
Instructions
- Prepare the Cucumber: Place the thin cucumber slices in a clean kitchen towel or paper towels. Sprinkle with a little salt and let them sit for 10-15 minutes to draw out excess moisture. Afterward, pat the slices dry with another towel to remove any remaining water, ensuring the sandwiches won’t be soggy.
- Make the Benedictine Spread: In a medium bowl, combine the softened cream cheese, mayonnaise, Dijon mustard, fresh or dried dill, garlic powder, salt, and pepper. Mix everything thoroughly until the spread is smooth and creamy.
- Assemble the Sandwiches: Spread a generous layer of the Benedictine spread onto one side of each bread slice. Arrange the cucumber slices evenly over half of the bread slices, covering the spread completely.
- Finish and Serve: Top the cucumber-covered slices with the remaining bread slices, spread side down, to form sandwiches. Cut each sandwich into quarters or triangles. Garnish with fresh parsley or dill if desired. Serve immediately or refrigerate until ready to serve.
Notes
- For best texture, removing excess moisture from cucumbers is essential to prevent sogginess.
- You can substitute mayonnaise with Greek yogurt for a lighter spread.
- These sandwiches are best served fresh but can be refrigerated for up to 4 hours before serving.
- Use white or whole wheat bread depending on your preference.
- For a vegan alternative, substitute cream cheese and mayonnaise with plant-based versions.
