Description

A delicious and creamy mushroom chicken recipe featuring tender seared chicken breasts cooked in a rich garlic mushroom sauce made with heavy cream, chicken broth, soy sauce, and Parmesan cheese. Ready in just 40 minutes, this comforting dish is perfect for a satisfying weeknight dinner.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil

Sauce and Mushrooms

  • 3 cloves fresh garlic, minced
  • 8 oz button or cremini mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth (homemade or store-bought)
  • 2 tbsp low-sodium soy sauce
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat and Season: Preheat a skillet over medium-high heat. Season chicken breasts with salt and pepper evenly on both sides.
  2. Sear Chicken: Add olive oil to the hot skillet and sear the chicken breasts for 5-7 minutes on each side until they develop a golden brown crust. Once cooked on the outside, remove them from the skillet and set aside.
  3. Cook Mushrooms and Garlic: In the same skillet, add a little more olive oil if needed, then sauté the sliced mushrooms and minced garlic for about 5 minutes until the mushrooms are tender and fragrant.
  4. Prepare Sauce: Pour chicken broth into the skillet with the mushrooms and garlic, letting it simmer for 2 minutes to reduce slightly. Stir in the heavy cream, low-sodium soy sauce, and grated Parmesan cheese until well combined, forming a creamy sauce.
  5. Combine and Simmer: Return the seared chicken breasts to the skillet, spooning the sauce over the top. Let everything simmer together for an additional 5 minutes so the chicken absorbs the flavorful sauce.
  6. Serve: Serve the creamy mushroom chicken hot, drizzling extra sauce over the chicken breasts for maximum flavor. Enjoy with your favorite side dishes.

Notes

  • Use chicken breasts of even thickness for uniform cooking.
  • For a lighter option, substitute heavy cream with half-and-half, but the sauce may be less thick.
  • Cremini mushrooms add a deeper flavor compared to button mushrooms but both work well.
  • Serve with steamed vegetables, mashed potatoes, or rice for a complete meal.
  • Adjust seasoning with additional salt and pepper if needed.
