Description

This Crispy Blueberry Grilled Cheese combines sweet and savory flavors with a crispy golden crust and a melty blend of white cheddar and mozzarella cheeses, accented by a homemade blueberry compote infused with fresh thyme and lemon juice.

Ingredients

Scale

Blueberry Compote

  • 1 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh thyme leaves

Sandwich

  • 8 slices sourdough bread
  • 4 ounces white cheddar cheese, shredded
  • 4 ounces mozzarella cheese, shredded
  • 4 tablespoons unsalted butter, softened
  • Pinch of flaky sea salt (optional)

Instructions

  1. Make the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, sugar, lemon juice, and fresh thyme leaves. Cook, stirring occasionally for 8 to 10 minutes, until the blueberries burst and the mixture thickens into a jam-like consistency. Remove from heat and let cool slightly.
  2. Prepare the Bread: Lay out the sourdough bread slices on a clean surface. Spread a generous spoonful of the blueberry compote evenly over four of the slices.
  3. Add Cheese Layers: Evenly distribute the shredded white cheddar and mozzarella cheese over the blueberry compote on the four slices of bread.
  4. Assemble the Sandwiches: Top each with the remaining four bread slices to complete the sandwiches. Spread softened butter evenly over the outside of each sandwich to ensure a crispy, golden crust during grilling.
  5. Grill the Sandwiches: Heat a skillet over medium-low heat. Place the sandwiches in the skillet and cook for 3 to 4 minutes per side. Use a spatula to gently press down on the sandwiches while grilling to help the cheese melt and the bread develop a crisp, golden-brown texture.
  6. Serve: Remove the grilled sandwiches from the skillet. Optionally sprinkle a pinch of flaky sea salt on top, slice in half, and serve warm for a delightful sweet and savory experience.

Notes

  • Use fresh or frozen blueberries interchangeably depending on availability.
  • Adjust sugar in the compote to taste, depending on blueberry sweetness.
  • For extra crispiness, use a cast iron skillet or a non-stick pan.
  • Try adding fresh herbs like thyme to the compote for a unique flavor twist.
  • Serve with a side salad or light soup for a balanced meal.
