Blueberry Compote

- 8 slices sourdough bread

- 4 ounces mozzarella cheese, shredded

Instructions
- Make the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, sugar, lemon juice, and fresh thyme leaves. Cook, stirring occasionally for 8 to 10 minutes, until the blueberries burst and the mixture thickens into a jam-like consistency. Remove from heat and let cool slightly.
- Prepare the Bread: Lay out the sourdough bread slices on a clean surface. Spread a generous spoonful of the blueberry compote evenly over four of the slices.
- Add Cheese Layers: Evenly distribute the shredded white cheddar and mozzarella cheese over the blueberry compote on the four slices of bread.
- Assemble the Sandwiches: Top each with the remaining four bread slices to complete the sandwiches. Spread softened butter evenly over the outside of each sandwich to ensure a crispy, golden crust during grilling.
- Grill the Sandwiches: Heat a skillet over medium-low heat. Place the sandwiches in the skillet and cook for 3 to 4 minutes per side. Use a spatula to gently press down on the sandwiches while grilling to help the cheese melt and the bread develop a crisp, golden-brown texture.
