Marinade
- 1/3 cup fresh lime juice
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Garnish
- 1/4 cup chopped fresh cilantro
Instructions
- Prepare the chicken: Place the boneless skinless chicken breasts or thighs in the bottom of your crockpot, spreading them out evenly.
- Mix the marinade: In a medium bowl, whisk together fresh lime juice, olive oil, minced garlic, chili powder, ground cumin, smoked paprika, onion powder, salt, black pepper, and honey until well combined.
- Coat the chicken: Pour the marinade over the chicken in the crockpot, then use a spoon or tongs to turn the chicken and coat it evenly with the mixture.
- Slow cook: Cover the crockpot and cook the chicken on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken is tender and cooked through.
