Instructions
- Prepare the Crust: Preheat your oven to 350°F (175°C). Line a mini or regular muffin tin with liners or lightly grease it with cooking spray. In a small bowl, combine graham cracker crumbs, 2 tablespoons granulated sugar, and melted butter. Mix until the crumbs are evenly coated. Press about 1 tablespoon of the mixture firmly into each muffin cup to form the base crust. Set aside.
- Prepare the Cream Cheese Filling: In a medium bowl, beat the softened cream cheese and 1/4 cup granulated sugar together until smooth and creamy. Add the egg, vanilla extract, and lemon juice and mix well until fully incorporated and the mixture is smooth.
- Assemble the Bites: Spoon the cream cheese filling over the prepared crusts in the muffin cups, filling each about three-quarters full. Add a small dollop of raspberry jam on top of each and gently swirl with a toothpick to create a marbled effect. Optionally, place a fresh raspberry in the center of each for extra texture and decoration.
- Bake: Place the muffin tin in the preheated oven and bake mini bites for 15-18 minutes or regular-sized bites for 20-22 minutes. The edges should be set and the tops slightly puffed when done. Remove from the oven and cool in the pan for 10 minutes before transferring the bites to a wire rack to cool completely.
