Description

These Delicious Raspberry Cream Cheese Bites combine a buttery graham cracker crust with a smooth, tangy cream cheese filling and a sweet burst of raspberry jam. Perfectly sized for a quick treat or elegant dessert, they are easy to make and delightfully creamy with a fruity twist.

Ingredients

Scale

Crust Ingredients

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1/4 cup unsalted butter, melted

Filling Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Topping Ingredients

  • 1/4 cup raspberry jam or preserves
  • 1/2 cup fresh raspberries (optional for added texture)

Instructions

  1. Prepare the Crust: Preheat your oven to 350°F (175°C). Line a mini or regular muffin tin with liners or lightly grease it with cooking spray. In a small bowl, combine graham cracker crumbs, 2 tablespoons granulated sugar, and melted butter. Mix until the crumbs are evenly coated. Press about 1 tablespoon of the mixture firmly into each muffin cup to form the base crust. Set aside.
  2. Prepare the Cream Cheese Filling: In a medium bowl, beat the softened cream cheese and 1/4 cup granulated sugar together until smooth and creamy. Add the egg, vanilla extract, and lemon juice and mix well until fully incorporated and the mixture is smooth.
  3. Assemble the Bites: Spoon the cream cheese filling over the prepared crusts in the muffin cups, filling each about three-quarters full. Add a small dollop of raspberry jam on top of each and gently swirl with a toothpick to create a marbled effect. Optionally, place a fresh raspberry in the center of each for extra texture and decoration.
  4. Bake: Place the muffin tin in the preheated oven and bake mini bites for 15-18 minutes or regular-sized bites for 20-22 minutes. The edges should be set and the tops slightly puffed when done. Remove from the oven and cool in the pan for 10 minutes before transferring the bites to a wire rack to cool completely.
  5. Chill and Serve: Refrigerate the bites for at least 1 hour to allow them to firm up for the best texture and flavor. Serve chilled and enjoy these creamy, fruity treats!

Notes

  • You can use a regular-sized muffin tin if you don’t have mini muffin tins; adjust baking time accordingly.
  • For a sweeter crust, increase the sugar in the crust mixture by 1 tablespoon.
  • Fresh raspberries are optional but add a nice fresh texture and brighten the flavor.
  • Make sure the cream cheese is fully softened to avoid lumps in the filling.
  • If you don’t have lemon juice, you can substitute with a teaspoon of lemon zest for a subtle citrus note.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
