Ingredients
Scale
Cookie Dough
- 1 cup butter, softened
- 3/4 cup granulated sugar
- 1 (3 oz) box of lime Jello powder (set aside 1 tbsp for frosting)
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated sugar (for rolling the cookies)
Frosting
- 1/4 cup butter, softened
- 1 ounce cream cheese, softened
- 2 cups powdered sugar
- 1-2 tablespoons milk
- 1 tablespoon lime Jello powder (reserved from box)
Instructions
- Preheat oven and prepare baking sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
- Cream butter and sugar: In a stand mixer, beat together the softened butter and 3/4 cup granulated sugar until the mixture becomes smooth and creamy, ensuring a fluffy base for the cookies.
- Add lime Jello powder and eggs: Mix in the lime Jello powder thoroughly, then add eggs one at a time, beating well after each addition for proper incorporation.
- Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to evenly distribute the leavening agents and seasoning.
- Mix dry into wet ingredients: Gradually add the flour mixture to the wet ingredients, mixing until everything is fully combined into a smooth dough without overmixing.
- Form and roll dough balls: Using a cookie scoop, form dough balls and roll each ball in the 1/4 cup granulated sugar, coating evenly. Place the coated balls on the prepared baking sheet and gently flatten them slightly with a glass for an even shape.
- Bake cookies: Bake the cookies for 8 to 10 minutes or until the edges turn golden. Then remove from oven and allow them to cool completely on the baking sheet to firm up.
- Prepare lime frosting: Beat together the softened butter, cream cheese, powdered sugar, milk (start with 1 tablespoon and add more if needed for consistency), and the reserved 1 tablespoon lime Jello powder until the frosting is smooth, creamy, and well blended.
- Frost the cookies: Once cookies have cooled, spread the prepared lime frosting evenly over each cookie. Serve immediately or store for later enjoyment.
Notes
- Make sure the cookies are completely cooled before frosting to prevent melting the frosting.
- Adjust milk amount in the frosting to reach your desired consistency.
- You can substitute cream cheese with additional butter if a dairy-free option is needed, though texture will vary.
- Store cookies in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
- For a more intense lime flavor, add an extra tablespoon of lime zest to the dough or frosting.
