Description

This Fried Egg Quesadilla is a quick and delicious breakfast or snack option featuring crispy flour tortillas filled with cheesy, perfectly fried eggs and optional fresh toppings like avocado. Cooked on the stovetop, it’s a flavorful and satisfying meal ready in just 15 minutes.

Ingredients

Scale

Quesadilla

  • 2 flour tortillas
  • 2 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon butter
  • Salt and pepper, to taste

Toppings (Optional)

  • Sliced avocado
  • Salsa
  • Sour cream
  • Fresh herbs

Instructions

  1. Prepare the Skillet: Heat a non-stick skillet over medium heat and melt a small amount of butter to prevent sticking and add flavor.
  2. Fry the Eggs: Crack one egg into the skillet, season with salt and pepper, and cook until the egg white is fully set but the yolk remains slightly runny. Remove the egg and repeat the process for the second egg.
  3. Assemble the Quesadilla: Place one flour tortilla in the skillet and evenly sprinkle half of the shredded cheese over it. Add the fried eggs on top, along with any optional ingredients like sliced avocado. Then, sprinkle the remaining cheese over the eggs and cover everything with the second tortilla.
  4. Cook the Quesadilla: Cook for 2-3 minutes on one side until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla and cook the other side for another 2-3 minutes until golden and the cheese is fully melted inside.
  5. Serve & Enjoy: Remove the quesadilla from the skillet, slice into wedges, and serve warm with salsa, sour cream, and fresh herbs if desired.

Notes

  • You can customize this quesadilla by adding ingredients such as cooked bacon, sautéed vegetables, or different types of cheese.
  • Cook eggs to your preferred doneness; for firmer yolks, cook a little longer.
  • Use whole wheat or gluten-free tortillas for dietary preferences.
  • To make it vegetarian, ensure no meat additions are included.
