Quesadilla
- 2 flour tortillas
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 avocado, sliced
- 1 tbsp butter (for frying the tortillas)
Eggs
- 2 large eggs
- Salt and pepper to taste
Instructions
- Heat skillet: Heat a non-stick skillet over medium heat and add a small amount of butter to prepare for cooking the eggs.
- Fry eggs: Crack one egg into the skillet, season with salt and pepper, and cook until the white is set but the yolk remains runny. Remove the egg and set aside. Repeat this process with the second egg.
- Assemble quesadilla base: In the same skillet, place one tortilla and sprinkle half of the shredded cheese evenly over it.
- Add eggs and avocado: Place the fried eggs on top of the cheese, then layer the avocado slices evenly over the eggs.
- Top and cook: Sprinkle the remaining cheese over the avocado and cover with the second tortilla. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Serve: Remove the quesadilla from the skillet, cut into wedges, and serve hot.
Notes
- Use a non-stick skillet to prevent the quesadilla from sticking and to help melt the cheese evenly.
- For a firmer yolk, cook the eggs longer according to your preference.
- Feel free to substitute flour tortillas with corn tortillas for a different texture.
- Adding a sprinkle of chili flakes can add a nice kick to the quesadilla.
