Description

A quick and flavorful sautéed vegetable dish featuring tender zucchini and mushrooms infused with garlic and fresh herbs, perfect as a healthy side for any meal.

Ingredients

Scale

Vegetables

  • 2 medium zucchinis, sliced thinly
  • 1 1/2 cups mushrooms, sliced

Seasonings

  • 3 cloves garlic, minced
  • 1 tsp fresh thyme
  • Salt & pepper, to taste
  • Fresh parsley for garnish

Fat

  • 2 tbsp olive oil or butter

Instructions

  1. Heat the fat: In a large skillet, heat the olive oil or butter over medium heat to prepare the pan for sautéing the vegetables.
  2. Cook the vegetables: Add the sliced zucchini and mushrooms to the skillet. Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften and become tender.
  3. Add garlic and thyme: Stir in the minced garlic and fresh thyme, cooking for another 2–3 minutes until the garlic becomes fragrant and the vegetables reach desired tenderness.
  4. Season and garnish: Season with salt and pepper to taste. Remove from heat, garnish with fresh parsley, and serve immediately for the best flavor and texture.

Notes

  • Use olive oil for a lighter, healthier option or butter for a richer flavor.
  • Fresh thyme enhances the herbal aroma; dried thyme can be used but reduce quantity to 1/2 tsp.
  • Slice vegetables uniformly for even cooking.
  • Can be served as a side dish or tossed with pasta or grains for a light meal.
  • For a vegan version, use olive oil instead of butter.
