Description

Crunchy on the outside, tender on the inside, these Garlic Parmesan Smashed Potatoes are an irresistible side dish. Boiled until soft, smashed to flatten, then baked with garlic, Parmesan, and olive oil for a crispy, flavorful finish. Perfectly seasoned and garnished with fresh parsley, this recipe is simple yet satisfying.

Ingredients

Scale

Potatoes

  • 1 lb baby potatoes

Seasoning & Toppings

  • 2 tablespoons olive oil
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the perfect temperature for baking the smashed potatoes crisp.
  2. Boil Potatoes: Place the baby potatoes in a pot of salted water and boil for 15-20 minutes until tender enough to pierce easily with a fork. Drain well and let them cool slightly so they’re easier to handle.
  3. Smash Potatoes: Arrange the potatoes spaced apart on a baking sheet. Using a fork or a potato masher, gently press down on each potato to flatten it slightly without breaking it apart completely.
  4. Add Flavorings: Drizzle the smashed potatoes evenly with olive oil, then sprinkle the minced garlic and grated Parmesan cheese over them. This mixture will infuse them with rich flavor during baking.
  5. Bake Until Crispy: Place the baking sheet in the preheated oven and bake for 20-25 minutes. Bake until the potatoes develop a golden-brown, crispy crust while remaining tender inside.
  6. Season and Garnish: Once baked, remove the potatoes and immediately season with salt and pepper to taste. Sprinkle fresh parsley over the top for a bright, fresh finish before serving.

Notes

  • Use baby potatoes or small new potatoes for best results; they cook evenly and smash easily.
  • Make sure not to over-smash so the potatoes retain some texture.
  • Freshly grated Parmesan melts better and gives a richer flavor than pre-grated varieties.
  • This dish pairs wonderfully with roasted meats or a fresh salad.
  • For a vegan variation, omit the Parmesan or substitute with a vegan cheese alternative.
