Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and make cleanup easier.
  2. Prepare the Potatoes: Wash and thoroughly dry the potatoes. Cut them into halves or quarters depending on their size to ensure they cook evenly and become crispy.
  3. Season the Potatoes: In a large mixing bowl, toss the potato pieces with olive oil, minced garlic, dried oregano, dried thyme, salt, black pepper, and lemon juice. Make sure each potato piece is evenly coated with the flavorful seasoning mixture.
  4. Roast the Potatoes: Arrange the seasoned potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 30-35 minutes, flipping the potatoes halfway through to promote even browning. Roast until the potatoes are golden brown and crispy on the edges.
