Description

These Grilled Chicken Broccoli Bowls feature tender grilled chicken breasts served over steamed broccoli and topped with a luscious, creamy garlic Parmesan sauce. This wholesome and flavorful meal is quick to prepare, making it perfect for a nutritious weeknight dinner.

Ingredients

Scale

For the Chicken and Broccoli

  • 4 chicken breasts
  • 4 cups broccoli florets
  • 2 tbsp olive oil
  • Salt and pepper, to taste

For the Creamy Garlic Sauce

  • 1/2 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the grill: Preheat your grill to medium heat to ensure it’s hot enough to cook the chicken evenly and develop a nice golden crust.
  2. Season and grill the chicken: Brush the chicken breasts with olive oil and season generously with salt and pepper. Place them on the grill and cook for 6-7 minutes per side, or until the chicken is fully cooked through and has a golden brown, slightly charred exterior.
  3. Cook the broccoli: While the chicken grills, steam or blanch the broccoli florets in boiling water for 4-5 minutes until they are tender but still vibrant green. Drain and set aside.
  4. Prepare the creamy garlic sauce: In a skillet over medium heat, melt the butter and sauté the minced garlic for 1-2 minutes until fragrant and lightly golden. Pour in the heavy cream and allow it to simmer gently for 3-4 minutes until it thickens slightly. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  5. Assemble the bowls: Slice the grilled chicken breasts into strips. Arrange the steamed broccoli in serving bowls, top with sliced chicken, and generously drizzle the creamy garlic sauce over the top.
  6. Serve: Serve the bowls immediately to enjoy the dish at its best with warm, creamy sauce and perfectly grilled chicken.

Notes

  • To check if chicken is cooked, use a meat thermometer; the internal temperature should reach 165°F (74°C).
  • You can substitute Parmesan with Pecorino Romano for a sharper flavor.
  • For a lighter sauce, substitute heavy cream with half-and-half or milk, though the sauce will be less thick.
  • Grilling chicken over medium heat helps prevent burning while ensuring the inside cooks thoroughly.
  • Broccoli can be steamed in a microwave-safe bowl with a small amount of water as a faster alternative.
