Description

Guacamole Shrimp Bites are a vibrant and flavorful appetizer featuring tender, seasoned shrimp atop crunchy tortilla chips, crowned with creamy, zesty guacamole. Perfect for parties or casual snacking, these bites bring a refreshing blend of spices, lime, and fresh ingredients in every delicious mouthful.

Ingredients

Scale

For the Shrimp

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1/2 lime

For the Guacamole

  • 2 ripe avocados, mashed
  • 1/4 cup diced red onion
  • 1/2 small jalapeño, finely chopped (optional, for heat)
  • 1 small tomato, diced
  • 1 tablespoon fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

To Serve

  • Tortilla chips (about 12-16)
  • Fresh cilantro leaves (for garnish)
  • Lime wedges (optional, for serving)

Instructions

  1. Prepare the shrimp: In a bowl, toss the shrimp with olive oil, chili powder, garlic powder, paprika, salt, pepper, and lime juice. Heat a large skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and cooked through. Remove from heat and set aside to cool slightly.
  2. Make the guacamole: In a bowl, mash the avocados until smooth. Add the diced red onion, jalapeño, tomato, cilantro, lime juice, salt, and pepper. Stir to combine and adjust seasoning as needed.
  3. Assemble the shrimp bites: On each tortilla chip, place a small spoonful of guacamole. Top with one shrimp per chip.
  4. Serve: Garnish the shrimp bites with fresh cilantro leaves and lime wedges on the side. Serve immediately and enjoy!

Notes

  • For extra heat, add more jalapeño or sprinkle with a dash of hot sauce.
  • Use freshly squeezed lime juice for the best flavor.
  • This recipe is best served fresh to keep the tortilla chips crisp.
  • Can be prepared a few hours in advance but assemble just before serving to prevent sogginess.
