Description

A delicious and quick recipe combining crispy fried halloumi with creamy avocado, sweet honey, and fresh cherry tomatoes on a toasted bagel. Perfect for a flavorful and satisfying breakfast or light meal.

Ingredients

Scale

Bagel and Toppings

  • 1 bagel, sliced and toasted
  • Cherry tomatoes, halved
  • Honey, for drizzling
  • Fresh herbs (such as basil or parsley), finely sliced
  • Salt and pepper, to taste

Halloumi and Avocado

  • 1/2 avocado
  • 4 slices of halloumi

Instructions

  1. Cook the Halloumi: Heat a non-stick pan over medium heat. Slice the halloumi into 4 pieces and place them in the hot pan. Fry for about 3 minutes per side, or until golden brown and crispy.
  2. Prepare the Ingredients: Toast the bagel until it is lightly browned. While the bagel toasts, mash the avocado in a small bowl with a fork until smooth. Halve the cherry tomatoes and finely slice the fresh herbs.
  3. Assemble the Bagel: Spread the mashed avocado evenly on both halves of the toasted bagel. Layer the golden fried halloumi slices on top. Add the halved cherry tomatoes and sprinkle the fresh herbs over everything.
  4. Season and Serve: Sprinkle salt and pepper over the assembled bagel to taste. Drizzle generously with honey for a perfect balance of savory and sweet. Serve immediately while the halloumi is warm and the bagel is crisp.

Notes

  • Ensure the pan is hot before frying the halloumi to get a nice golden crust.
  • You can substitute the bagel with any other type of bread or muffin if preferred.
  • Fresh herbs add a lovely brightness – basil or parsley work especially well.
  • Adjust honey drizzling to your sweetness preference.
  • Serve immediately to enjoy the contrast between warm halloumi and creamy avocado.
