- 2 medium potatoes, peeled and diced
- 2 large carrots, peeled and sliced

Instructions
- Cook the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage and cook, breaking it into bite-sized pieces with a spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside.
- Sauté the Vegetables: In the same pot, add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
- Add the Broth and Vegetables: Pour in the chicken broth and bring it to a simmer. Add the chopped cabbage, diced potatoes, and sliced carrots. Stir to combine all ingredients evenly.
- Season the Stew: Add dried thyme, paprika, salt, and pepper to the pot. Stir everything together, cover, and let it simmer gently for 25-30 minutes or until the vegetables are tender and cooked through.
- Add the Sausage Back: Once the vegetables are tender, return the cooked sausage to the pot. Stir well and allow the stew to simmer for an additional 5 minutes so the flavors meld nicely.
- Serve: Ladle the stew into bowls and garnish with fresh chopped parsley if desired. Serve hot with crusty bread on the side for a complete and satisfying meal.
