Ingredients
Scale
For the Steak Bites
- 1 lb sirloin steak, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
For the Baked Potatoes
- 4 large russet potatoes
- 2 tablespoons olive oil
- Salt for seasoning the potatoes
Toppings for Loaded Baked Potatoes
- 1/2 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 slices cooked bacon, crumbled
- 2 green onions, chopped
- 1 tablespoon butter (optional)
Instructions
- Prepare the Baked Potatoes: Preheat your oven to 400°F (200°C). Thoroughly wash the russet potatoes and pat them dry. Rub each potato evenly with olive oil and sprinkle with salt to season the skin.
- Bake the Potatoes: Place the seasoned potatoes directly on the oven rack or on a baking sheet. Bake for about 45-50 minutes, or until the potatoes are tender when pierced with a fork.
- Cook the Steak Bites: While the potatoes bake, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the sirloin steak pieces with garlic powder, onion powder, smoked paprika, salt, and pepper. Add the steak bites to the hot skillet and cook for 3-5 minutes, stirring occasionally, until browned and cooked to your preferred doneness.
- Assemble the Loaded Potatoes: Once the baked potatoes are done, slice each open lengthwise and fluff the inside with a fork. Optionally, add a tablespoon of butter to each potato for extra richness. Sprinkle shredded cheddar cheese over the hot potatoes to allow it to melt.
- Top with Steak Bites and Garnish: Remove the melted cheese potatoes from the oven if reheated. Top each potato with cooked steak bites, sour cream, crumbled bacon, and chopped green onions to serve.
Notes
- For extra flavor, marinate the steak bites briefly with the spices and a splash of soy sauce or Worcestershire sauce before cooking.
- You can prepare the baked potatoes ahead of time and reheat them in the oven before assembling.
- Use a meat thermometer to ensure the steak bites are cooked to your desired level of doneness (medium rare is about 135°F).
- Substitute cheddar cheese with pepper jack or mozzarella for variation.
- For a lower-fat option, use reduced-fat sour cream or Greek yogurt.
