Description

  • 2 chicken breasts, diced
  • 2 tbsp olive oil

Vegetables and Aromatics

  • 1 cup frozen peas and carrots

Rice and Eggs

  • 2 cups cooked brown rice
  • 2 eggs, beaten

Seasonings

  • 3 tbsp soy sauce

Instructions

  1. Cook the Chicken: Heat 1 tbsp of olive oil in a large skillet or wok over medium heat. Add diced chicken and cook for 7-8 minutes until browned and crispy. Remove the chicken and set aside.
  2. Sauté Garlic: In the same skillet, add the remaining 1 tbsp of olive oil. Sauté minced garlic for 1-2 minutes until fragrant, taking care not to burn it.
  3. Scramble Eggs: Push the garlic to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, breaking them into small pieces.
  4. Add Rice and Veggies: Stir in the cooked brown rice along with the frozen peas and carrots, mixing everything evenly to combine the flavors.
  5. Season: Add soy sauce, garlic powder, salt, and pepper to the skillet, stirring continuously to ensure all ingredients are well-coated and flavorful.
  6. Add Chicken: Return the crispy cooked chicken to the skillet and stir well until everything is evenly mixed and heated through.
  7. Garnish and Serve: Remove the skillet from heat and garnish with freshly chopped green onions before serving hot.
