Honey Pineapple Sauce

  • 1 cup fresh pineapple chunks or canned pineapple, drained
  • 1/4 cup pineapple juice
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon lime juice


Instructions

  1. Preheat and prepare salmon: Preheat your oven to 400°F (200°C) and lightly grease a baking dish to prevent sticking. Place the salmon fillets in the dish in a single layer and season them lightly with salt and black pepper to enhance their natural flavor.
  2. Make the sauce: In a small bowl, whisk together pineapple juice, honey, soy sauce, olive oil, minced garlic, grated ginger, and lime juice until the ingredients are well combined and the mixture is smooth.
  3. Add sauce and pineapple to salmon: Spoon half of the prepared sauce evenly over the salmon fillets, ensuring they are well coated. Scatter the pineapple chunks evenly around and on top of the salmon to infuse fruity sweetness.
