Yogurt Preparation

  • 450g coconut yogurt

  • 5 kiwis, peeled and diced
  • ½ lime, zested
  • 3 mint sprigs, leaves picked and chopped
  • 20g pomegranate seeds

Instructions

  1. Strain the Coconut Yogurt: Line a fine sieve with two sheets of kitchen paper or a square of muslin. Place the sieve over a small bowl, pour in the coconut yogurt, and refrigerate for 4 hours to allow excess moisture to drain off, resulting in a thicker consistency.
  2. Prepare Kiwi Purée and Mix: In a blender, purée half of the diced kiwi until smooth. Fold this kiwi purée gently into the strained coconut yogurt along with the lime zest. Discard any liquid collected in the bowl from draining the yogurt.
  3. Assemble the Parfaits: Using small glasses (approximately 150ml each), layer the coconut yogurt mixture and the remaining diced kiwis alternately. Sprinkle chopped mint leaves on top of each layer of kiwi for freshness and flavor.
  4. Garnish and Serve: Finish each parfait with pomegranate seeds and a drizzle of clear honey if desired. Serve immediately to enjoy the best texture and freshness.
