Instructions
- Preheat and prepare muffin pan: Preheat your oven to 350°F (175°C). Line a muffin pan with paper liners or grease the cups thoroughly to prevent sticking.
- Mix dry ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger until well combined.
- Combine wet ingredients: In a separate bowl, beat the eggs lightly. Then stir in the Libby’s pumpkin, vegetable oil, milk, and vanilla extract until the mixture is smooth and even.
- Combine wet and dry: Add the wet ingredients to the bowl with dry ingredients. Stir gently and just until combined to avoid overmixing, which could make the muffins tough.
- Fill muffin cups: Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full to allow room for rising.
- Bake: Place in the oven and bake for 20 to 24 minutes. Check doneness by inserting a toothpick into the center of a muffin; it should come out clean when done.
