Rice

Tomato Sauce

  • 1 can (15 oz) crushed tomatoes
  • 1/2 cup beef or chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon sugar (optional, to balance acidity)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste


Instructions

  1. Make the Meatballs: In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, basil, salt, pepper, and parsley if using. Mix gently until just combined to avoid tough meatballs.
  2. Shape the Meatballs: Form the mixture into 1 1/2-inch meatballs and place them on a plate, ready for cooking.
  3. Brown the Meatballs: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add meatballs in batches, making sure not to crowd the pan. Brown on all sides, about 5-7 minutes. Remove and set aside.
  4. Sauté Aromatics: In the same skillet, add chopped onion and minced garlic. Cook for 2-3 minutes until softened and fragrant.
  5. Cook the Rice: Add rice to the skillet with onions and stir to coat with oil. Pour in broth, salt, and pepper, and bring to a simmer.
