Description

A simple and delicious Mediterranean-inspired recipe featuring baked feta cheese with eggs, cherry tomatoes, Kalamata olives, and herbs. This flavorful dish combines creamy feta with perfectly baked eggs, making it ideal for breakfast, brunch, or a light dinner.

Ingredients

Scale

Main Ingredients

  • 1 block (about 8 oz) feta cheese, cubed
  • 4 large eggs
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano (or fresh if available)
  • Salt and black pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)
  • Optional: A pinch of red pepper flakes for heat

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it’s at the right temperature for baking the feta and eggs evenly.
  2. Prepare the Baking Dish: Drizzle olive oil into a small baking dish (approximately 9×9 inches). Add the cubed feta cheese to the dish, then scatter the halved cherry tomatoes and sliced Kalamata olives around the cheese to distribute the flavors.
  3. Season: Sprinkle the dried oregano, salt, and black pepper evenly over the feta, tomatoes, and olives. If you prefer a bit of spice, add a pinch of red pepper flakes to give the dish a subtle heat.
  4. Create the Wells: Using a spoon, gently make four small wells in the feta and vegetable mixture. Carefully crack one egg into each well, making sure not to break the yolks.
  5. Bake: Place the baking dish into the preheated oven. Bake for 12-15 minutes, or until the egg whites are set and the yolks are still slightly runny, or cooked to your preferred doneness.
  6. Serve: Remove from the oven and garnish with freshly chopped parsley or basil for a burst of freshness. Serve warm alongside crusty bread or pita to soak up the delicious sauce and melted feta.

Notes

  • You can substitute fresh oregano if available for a fresher flavor.
  • Adjust baking time based on how runny or firm you like your egg yolks.
  • Serve with crusty bread or pita for a more filling meal.
  • The recipe is easily doubled for more servings.
  • Red pepper flakes are optional but add a pleasant kick.
