Gnocchi and Toppings

  • Two 16-oz packages of pre-cooked gnocchi
  • Your favorite golden breadcrumbs


Instructions

  1. Prepare the Red Sausage Sauce: Heat 1–2 tablespoons of extra-virgin olive oil in a large skillet over medium heat. Add the ground Italian sausage (or meatless alternative) and cook until browned and cooked through, breaking it up with a spoon. Add the minced onion and garlic and sauté until fragrant and translucent, about 3-4 minutes. Stir in the crushed tomatoes, dried oregano, salt, and red pepper flakes to taste. Simmer the sauce on low heat for 20-25 minutes to let the flavors meld.
  2. Make the Herbed Ricotta: In a small bowl, combine the ricotta cheese with grated garlic, lemon zest, lemon juice, and a pinch of salt. Stir in minced fresh herbs such as chives, parsley, and thyme to provide fresh, aromatic flavors. Adjust the seasoning as needed and set aside.
  3. Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the pre-cooked gnocchi packages and cook until they float to the surface, about 2-3 minutes. Drain the gnocchi thoroughly.
