Marinade and Sauce

- ½ cup low-sodium soy sauce
- ¼ cup honey
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp cornstarch
- 1-2 tbsp cooking oil (for searing)
Instructions
- Prepare the marinade: In a bowl, whisk together soy sauce, honey, lemon juice, minced garlic, and cornstarch until smooth to create the marinade.
- Marinate the chicken: Add the chicken breasts to the marinade and refrigerate for at least 30 minutes; marinating overnight will enhance the flavor even more.
- Preheat the skillet: Heat a large skillet over medium heat and add enough cooking oil to coat the pan evenly.
- Cook the chicken: Remove chicken breasts from the marinade, letting excess drip off. Sear the chicken in the hot skillet for 5-7 minutes per side until golden brown and cooked through (internal temperature of 165°F / 74°C).
- Make the sauce: After removing the chicken, pour the remaining marinade into the skillet. Stir constantly over medium heat until the sauce thickens and becomes glossy, which usually takes a few minutes.
