Ingredients
Scale
Dry Ingredients
- 2 cups unsweetened shredded coconut
- 1 cup rolled oats
- 1/2 cup mini chocolate chips
Wet Ingredients
- 1/3 cup coconut oil
- 1/4 cup honey or maple syrup
- 1/2 teaspoon peppermint extract
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
Instructions
- Prepare the baking sheet. Line a baking sheet with parchment paper to prevent sticking and make it easier to remove clusters once set.
- Mix dry ingredients. In a large bowl, combine the shredded coconut, rolled oats, and mini chocolate chips, ensuring they’re evenly distributed for consistent flavor and texture.
- Melt wet ingredients. In a small saucepan over low heat, melt the coconut oil. Stir in the honey or maple syrup, peppermint extract, vanilla extract, and salt until the mixture is smooth and fully combined for a perfectly sweet, minty base.
- Combine wet and dry mixtures. Pour the warm coconut oil mixture over the dry ingredients. Stir thoroughly until all dry ingredients are evenly coated with the wet mixture, forming a sticky batter.
- Form the clusters. Using a spoon, scoop spoonfuls of the mixture onto the prepared baking sheet. Gently press each into small clusters to help them hold their shape when set.
- Chill to set. Refrigerate the baking sheet for 30 to 40 minutes or until the clusters are firm and ready to eat.
- Serve. Remove the clusters from the refrigerator and enjoy immediately, or store in an airtight container in the fridge for later.
Notes
- Adjust the amount of peppermint extract to taste; start with less for a milder mint flavor.
- Store the clusters in an airtight container in the refrigerator to maintain firmness and freshness.
- Can be made vegan by using maple syrup instead of honey.
- Ingredients can be substituted with gluten-free oats to ensure the recipe is gluten-free.
