Description

Deliciously caramelized roasted sweet potato rounds drizzled with honey and topped with crumbled feta cheese and fresh herbs, perfect as a flavorful Mediterranean-inspired side dish.

Ingredients

Scale

Sweet Potatoes

  • 2 large sweet potatoes, sliced into 0.5-inch rounds

Seasoning & Toppings

  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon smoked paprika (optional)
  • 0.25 cup crumbled feta cheese
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme or parsley, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Sweet Potatoes: Arrange the sweet potato rounds in a single layer on the prepared baking sheet. Drizzle evenly with olive oil, then season with salt, black pepper, and smoked paprika if using. Toss gently to make sure every piece is coated.
  3. Roast First Side: Place the baking sheet in the oven and roast the sweet potato rounds for 20 minutes until they start to caramelize and become tender.
  4. Flip and Continue Roasting: Carefully flip each sweet potato round to ensure even cooking, then roast for an additional 15 to 20 minutes until they’re fully tender and lightly caramelized on both sides.
  5. Add Honey and Toppings: Remove the roasted sweet potatoes from the oven. While still warm, drizzle the rounds with honey, then sprinkle crumbled feta cheese and chopped fresh thyme or parsley on top.
  6. Serve: Serve warm as a vibrant side dish that pairs perfectly with roasted meats or as a tasty holiday option.

Notes

  • For extra crisp edges, space the sweet potato rounds slightly apart on the baking sheet to allow better air circulation.
  • This dish pairs wonderfully with roasted chicken or salmon.
  • Try using fresh herbs like thyme or parsley according to your preference to enhance flavor.
