Instructions
- Preheat and prepare vegetables. Preheat the oven to 400°F. Arrange the halved tomatoes, quartered onion, and peeled garlic cloves on a large baking sheet.
- Season and roast. Drizzle the vegetables with olive oil and sprinkle with salt, black pepper, and dried oregano. Toss gently to coat evenly. Roast in the oven for 35 to 40 minutes until the tomatoes are soft and slightly caramelized.
- Simmer the roasted vegetables. Transfer the roasted vegetables, including any juices from the baking sheet, to a large pot. Add the vegetable broth and bring the mixture to a gentle simmer over medium heat. Let simmer for 10 minutes to combine flavors.
- Blend the soup. Remove the pot from heat and, using an immersion blender or countertop blender, blend the soup until smooth and creamy.
- Add basil and cream. Stir in the fresh basil leaves and blend briefly again to incorporate. If desired, add the heavy cream and mix well. Taste and adjust seasoning as needed.
- Serve. Serve the soup warm, paired nicely with grilled cheese or crusty bread for a hearty meal.
