Ingredients
Scale
For the Prawn Paste
- 12 oz raw prawns, peeled and deveined
- 2 green onions, chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1 egg white
For the Toast & Assembly
- 6 slices white bread, crusts removed
- 1/4 cup sesame seeds
- Vegetable oil, for frying
- 6 mini slider buns
- Lettuce leaves
- Sriracha mayo (optional)
Instructions
- Prepare the prawn paste: In a food processor, combine the peeled prawns, chopped green onions, soy sauce, sesame oil, grated ginger, minced garlic, and egg white. Pulse until a smooth, cohesive paste forms, ensuring all ingredients are well blended.
- Cut the bread: Take each slice of white bread and cut diagonally to create two triangles, resulting in 12 triangular pieces in total.
- Spread prawn paste on bread: Generously spread the prawn mixture on one side of each bread triangle, covering the surface evenly.
- Coat with sesame seeds: Dip the prawn-covered side of each bread triangle into the sesame seeds, pressing gently to adhere a good coating of sesame seeds over the prawn paste.
- Heat oil and fry: Heat vegetable oil in a frying pan over medium heat. Place the prawn toasts in the pan, sesame seed side down first. Fry for about 2 to 3 minutes or until that side turns golden and crispy. Flip and cook the other side for 1 to 2 minutes until cooked through and lightly browned.
- Drain excess oil: Remove the prawn toasts from the pan and let them drain on paper towels to remove excess oil and keep them crispy.
- Assemble the sliders: On each mini slider bun, place a fresh lettuce leaf, then top with a piece of the warm prawn toast. Add a dollop of sriracha mayo if desired for extra flavor and heat.
- Serve while warm: Serve the assembled sliders immediately to enjoy the contrast of crispy prawn toast and soft buns at their best.
Notes
- Make sure the prawns are finely processed to achieve a smooth texture for the paste.
- Use white bread without crusts to ensure even cooking and a pleasing appearance.
- The sesame seed coating adds crunch and nuttiness—press firmly for good adhesion.
- Maintain medium heat while frying to avoid burning and ensure the prawn toast cooks through.
- These sliders are best enjoyed fresh and warm for optimal texture.
- Sriracha mayo is optional but adds a spicy kick that complements the prawns beautifully.
