Instructions

  1. Sauté Vegetables: Heat the olive oil in a large skillet over medium-high heat. Add the finely diced onion and red bell pepper, sautéing for 2-3 minutes until softened. Then, add minced garlic and cook for an additional 30 seconds until fragrant.
  2. Browns Turkey and Season: Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease from the skillet. Stir in kosher salt, black pepper, chili powder, cumin, chipotle powder, and dried cilantro. Cook the seasoned turkey for 2 minutes to ensure the spices are well incorporated.
  3. Combine Remaining Ingredients: Add the Rotel tomatoes, diced green chilies, rinsed black beans, frozen corn, cooked rice, and 1/2 cup of shredded cheddar cheese to the skillet. Stir all the ingredients together and cook for 2 minutes more until heated through.
  4. Melt Cheese and Serve: Sprinkle the remaining 1 cup of cheddar cheese on top of the skillet mixture. Cover the skillet, turn off the heat, and let it sit for 5 minutes to allow the cheese to melt fully.
