Ingredients
Scale
Cream Mixture
- 8 ounces mascarpone cheese, softened
- 1 cup heavy cream
- 0.75 cup powdered sugar, divided
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 0.25 teaspoon ground cinnamon
Coffee Soak
- 1.5 cups strong brewed coffee, cooled
- 2 tablespoons maple syrup
Assembly
- 24 ladyfinger cookies
- Unsweetened cocoa powder, for dusting
Instructions
- Whip Cream: In a large bowl, whip the heavy cream with 0.5 cup powdered sugar until soft peaks form, ensuring a light and airy texture to fold into the mascarpone mixture.
- Prepare Pumpkin Mascarpone Mixture: In another bowl, beat the mascarpone cheese with the remaining 0.25 cup powdered sugar until smooth. Add pumpkin puree, vanilla extract, pumpkin pie spice, and ground cinnamon; mix thoroughly until completely combined.
- Combine Creams: Gently fold the whipped cream into the pumpkin mascarpone mixture until the mixture is light and fluffy, taking care not to deflate the cream.
- Dip Ladyfingers: In a shallow dish, stir together the cooled strong brewed coffee and maple syrup. Quickly dip each ladyfinger into this coffee mixture, turning once to soak evenly but not soggy.
- Assemble Layers: Arrange a single layer of dipped ladyfingers at the bottom of a 9×9-inch dish. Spread half of the pumpkin cream mixture evenly over the ladyfingers. Repeat with a second layer of dipped ladyfingers and the remaining pumpkin cream mixture.
- Finish and Chill: Smooth the top of the tiramisu and dust lightly with unsweetened cocoa powder. Cover the dish and refrigerate for at least 4 hours, or overnight, allowing the flavors to meld and dessert to set properly.
- Serve: Slice into squares and serve chilled for the best flavor and texture.
Notes
- For an extra layer of spice, add a pinch of ground cloves or ginger to the pumpkin mascarpone mixture.
- This dessert tastes even better the next day after chilling overnight, allowing the flavors to fully develop.
