Description

This Spicy Jalapeño Chicken Stir-Fry is a quick and flavorful dish that comes together in just 20 minutes, perfect for a healthy weeknight dinner. Tender slices of chicken breast are stir-fried with vibrant jalapeños, red bell pepper, and broccoli, all coated in a savory blend of soy sauce, oyster sauce, and a hint of honey. Finished with aromatic garlic and ginger, and garnished with green onions and sesame seeds, this recipe delivers a spicy kick that’s better than takeout!

Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breasts, thinly sliced

Vegetables

  • 2 jalapeños, sliced (seeds removed for less heat)
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced

Sauces & Oils

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1 tsp honey

Seasoning & Garnish

  • Salt and pepper, to taste
  • Optional: sliced green onions and sesame seeds for garnish

Instructions

  1. Heat the oil: Heat vegetable oil in a large skillet or wok over medium-high heat to prepare for cooking the chicken.
  2. Cook the chicken: Add the thinly sliced chicken breasts to the hot skillet. Season with salt and pepper, then stir-fry the chicken until it is cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  3. Sauté aromatics: In the same skillet, add the sesame oil along with the minced garlic and ginger. Sauté for about 1 minute, or until fragrant, to build a flavorful base.
  4. Cook the vegetables: Add the sliced jalapeños, red bell pepper, and broccoli florets to the skillet. Stir-fry the vegetables for 3-4 minutes until they are crisp-tender and vibrant in color.
  5. Combine chicken and vegetables: Return the cooked chicken to the skillet with the vegetables, mixing them together evenly.
  6. Add the sauces and honey: Stir in the soy sauce, oyster sauce, and honey. Toss everything together to ensure the chicken and vegetables are well coated. Continue cooking for another 2 minutes to heat through and meld the flavors.
  7. Garnish and serve: Remove the skillet from heat. Garnish the stir-fry with sliced green onions and sesame seeds if using. Serve hot with steamed rice or noodles for a complete meal.

Notes

  • For less heat, remove the seeds from jalapeños before slicing.
  • You can substitute chicken breasts with thigh meat for a juicier texture.
  • Adjust the amount of honey to balance the spice level to your preference.
  • Serve immediately to keep the vegetables crisp-tender.
  • Leftovers keep well refrigerated for up to 2 days and reheat quickly in a skillet.
