Description

This Stir-fried Bok Choy with Ground Meat is a quick and flavorful Asian-inspired dish featuring tender bok choy and your choice of ground meat cooked with aromatic garlic, ginger, and a savory blend of soy, oyster, and hoisin sauces. Perfect for a healthy weeknight dinner served over rice or noodles.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground meat (chicken, pork, turkey, or beef)
  • 4 cups bok choy, chopped (about 4 medium heads)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced

Oils and Sauces

  • 2 tablespoons vegetable oil (or sesame oil for extra flavor)
  • 2 tablespoons soy sauce (low-sodium recommended)
  • 1 tablespoon oyster sauce (optional, for extra umami)
  • 1 tablespoon hoisin sauce (optional, for sweetness)
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil (optional, for garnish)

Additional Flavorings

  • 1 tablespoon sugar (optional, to balance flavors)
  • Red pepper flakes (optional, for heat)
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. Prepare the Bok Choy: Rinse the bok choy thoroughly to remove any dirt between the leaves. Chop it into bite-sized pieces and set aside.
  2. Cook the Ground Meat: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the ground meat and cook, breaking it apart with a spoon until browned and fully cooked, about 5-7 minutes. Remove the cooked meat from the pan and set aside.
  3. Sauté Aromatics: In the same skillet, add another tablespoon of oil if needed. Add the chopped onion, minced garlic, and ginger. Sauté for 2-3 minutes until fragrant and the onion is softened.
  4. Add the Bok Choy: Add the chopped bok choy to the pan, stirring well to coat it in the oil and aromatics. Cook for 3-4 minutes until the bok choy is tender but still slightly crisp.
  5. Stir in Sauces: Return the cooked ground meat to the pan. Stir in the soy sauce, oyster sauce (if using), hoisin sauce (if using), rice vinegar, and sugar. Mix thoroughly and cook for another 2-3 minutes allowing flavors to meld.
  6. Finish and Serve: Sprinkle red pepper flakes for heat if desired. Drizzle with sesame oil for extra flavor and garnish with fresh cilantro or green onions. Serve immediately over steamed rice or noodles for a complete meal.

Notes

  • Use any ground meat you prefer such as chicken, pork, turkey, or beef.
  • For a vegetarian version, substitute ground meat with crumbled tofu or tempeh.
  • Adjust soy sauce and oyster sauce amounts to suit your salt preference.
  • Oyster and hoisin sauces are optional but add depth and sweetness to the dish.
  • Serve with steamed rice or noodles for a filling meal.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on stovetop.
