  3. Mix the Muffin Batter: In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and 1 teaspoon cinnamon. In a separate large bowl, cream together the softened butter and 1 cup sugar until the mixture is light and fluffy. Then, beat in the eggs one at a time, followed by the vanilla extract.
